I have lived in Japan for over 10 years, but for a long time I never learned how to cook Japanese food. I always thought I could continue making the recipes that I grew up with in Australia. And this was definitely possible for many years….until I had children!
Cooking for children requires a lot of skill I quickly realised – you need to cook fast (while holding your kids at the same time!), make it nutritious, and also make it fun.
It is not so easy to find the ingredients that are available in Australia, so I decided to immerse myself in cooking Japanese food the traditional way. It was then that I discovered all the wonderful fresh vegetables, meats, fish, and grains that are available here.
And even better, I had always thought Japanese food requires a lot of preparation. But to my delight I have found that the majority of Japanese dishes are extremely simple. It’s just that they tend to make lots of dishes separately (rather than throw everything into a stir-fry like I used to do in Australia!), and they prepare them in a way that they can be kept in the fridge for 2-3 days and eat only a portion each day. I know many Japanese mothers who actually only cook once a week – they prepare everything on a Sunday and store it in the fridge and then bring a portion of each dish out each night of the weekday. Fabulous!
