Organic spanish onion pickles inspired by Japanese Instagrammer “Kokoronotane”

I recently found the most wonderful recipe book at the bookstore the other day in Tokyo.

It is by a chef named Yasuyo, who is a Natural Food Coordinator and has a popular instagram called Kokoronotane.

I was inspired in particularly by her use of the color purple, which she adds to all her bento creations by using vegetables such as eggplant or a little spoonful of spanish onion pickles.

I made the spanish onion pickles recipe and it is delicious!

Spanish Onion Pickles

Serves: 6 Cooking Time: 10 min

Ingredients

  • 1/2 Spanish Onion
  • 2 tbsp White wine vinegar
  • 1 tbsp Honey
  • 2 tsp Lemon juice
  • Pepper

Instructions

Finely slice the spanish onion and leave to soften on a large plate for 30 min

Transfer the spanish onions into a bowl, combine the other ingredients and pour over the onions and refrigerate

Notes

I used my Japanese "Hario" pickles jar This can be kept in the refrigerator for 5 days
