There is a lovely story behind the Brown Swiss brand. One day, a Brown Swiss calf arrived on the truck from a dairy farm in Kanto area along with a consignment of Holstein cattle by mistake. Rather than send the Brown Swiss calf back, Ando’s mother decided to keep him. All the farm staff fell in love with this Brown Swiss calf’s friendly temperament, that Ando’s mother started to buy Brown Swiss calves on purpose. The dairy farmers heard about Ando’s mother and started to call her and ask her if she wanted their male Brown Swiss calves too (as the dairy farmers only wanted the females as replacement cattle in their dairy herd). From there their numbers of Brown Swiss steers grew and grew, and that is how the Kosmos Farm Brown Swiss “Tokachi Boya beef” brand started!
Kosmos Farm Brown Swiss beef is now in high demand. It is has been featured on the menu at restaurants in Tokyo, such as the Italian Bunryu restaurant in Takadanobaba, and &ecle which is a French Restaurant in Aoyama.
