Chicken/ Rice/ Rice sandwich (onigirazu)

Healthy chicken onigirazu (rice sandwich) with broccoli rice and spanish onion

This is one of the most delicious onigirazu I have made so far.

Although I must admit they are all delicious! It is hard to go wrong with onigirazu – it is one of the simplest, most delicious and easiest things to make.

This recipe is based on:

  • My onigirazu cookbook which featured one very colorful onigirazu with broccoli rice, which I thought would be perfect for my kids as they find it hard to eat broccoli on its own
  • The boiled chicken is extremely easy and requires minimal effort – I decided to make this as it is getting hot in Tokyo and I thought simple boiled chicken would be healthy and light
  • Spanish onion pickles – see recipe here

Place plastic wrap under the nori

Finely chop the cooked broccoli

Stir the broccoli into the cooked rice

Scoop the broccoli rice into a square shape

Squash into shape with the lid (I have this handy tool I found in a shop in Tokyo. It is available online)

Place the square-shaped rice on the nori

Place the chicken breast on top of the rice

Place the spanish onion pickles on top of the chicken

Fold over the 2 ends of the nori seaweed and cut the edge with kitchen scissors

Firmly wrap in the plastic glad wrap and cut with w moistened knife
