This is one of the most delicious onigirazu I have made so far.
Although I must admit they are all delicious! It is hard to go wrong with onigirazu – it is one of the simplest, most delicious and easiest things to make.
This recipe is based on:
- My onigirazu cookbook which featured one very colorful onigirazu with broccoli rice, which I thought would be perfect for my kids as they find it hard to eat broccoli on its own
- The boiled chicken is extremely easy and requires minimal effort – I decided to make this as it is getting hot in Tokyo and I thought simple boiled chicken would be healthy and light

Ingredients clockwise from center – nori seaweed, rice, broccoli, chicken, spanish onion pickles
Place plastic wrap under the nori
Finely chop the cooked broccoli
Stir the broccoli into the cooked rice
Scoop the broccoli rice into a square shape
Squash into shape with the lid (I have this handy tool I found in a shop in Tokyo. It is available online)
Place the square-shaped rice on the nori
Place the chicken breast on top of the rice
Place the spanish onion pickles on top of the chicken
Place the top layer of rice on top
This is the layered effect of all the ingredients. So pretty!
Fold over the 2 ends of the nori seaweed and cut the edge with kitchen scissors
Fold the edges in so the nori sticks to the rice
Fold the other ends over to make a compact square
Firmly wrap in the plastic glad wrap and cut with w moistened knife
Finished! Place in a bento lunchbox or on a cute plate and serve
